A door held by one cable can drop or twist in the opening. Running the opener at that point pulls the bottom section out of shape, bends the vertical track, or wedges the door so far into the frame that a straightforward cable swap turns into panel and track work.

Can the cable just be wound back onto the drum?
Only if it is undamaged and the underlying cause has been found and fixed. A cable that has jumped once will jump again if a spring is weak or a track is out of line. Where there is any fraying at all, it gets replaced instead.
One side of the door is hanging low. Is that definitely a cable?
It is the most likely explanation, though a broken spring on a two-spring door and a loose bottom bracket both look much the same from the driveway. The technician can tell which within a couple of minutes of arriving.
How do I stop this happening again?
